Talena's Soaked Pancake Recipe
The night before, put the following to soak in a covered bowl:
1 1/2 cups whole wheat flour (freshly ground is best, but not mandatory)
1 1/2 cups kefir
Soak at least 7 hours.
In the morning, add:
2 tbsp. olive oil
1-2 tbsp. Rapadura (unprocessed sugar)
1 tbsp. baking powder (aluminum-free)
1 egg
1/2 tsp. vanilla extract (optional)
1/2 tsp. natural sea salt (additive-free)
Opt:
Add in 1/3 cup blueberries, or add-in of your choice. (These make for flatter pancakes, though. I don't know why.)
Mix and fry on medium-low heat, just like regular pancakes. These will be slightly moister and heavier than regular pancakes, with a pleasant sourdough-like taste.
